Fennel
Fennel can be eaten raw or cooked.
Lots of people compare its taste to licorice or aniseed.
It's crunchy and sweet when raw (Italians enjoy eating raw sliced fennel after a big meal to help digestion), then its texture becomes silky soft and its taste milder once cooked.
A word of caution - be careful not to overwhelm a dish with too much fennel. Like our Goldilocks, when you get it 'just right', it can add a unique and interesting layer of flavour to your dish.
