Bell-ieve it or not, all the different coloured bell peppers are actually the same type of pepper, but just at different stages of ripeness.

Green peppers are unripe, red are fully ripe, and the yellow and orange sit in the transition stage, a bit like the teenagers of the pepper world.

Red peppers pack the most nutrition. They're the sweetest of the lot because they've been on the vine the longest and been allowed to mature.

Green peppers have a more bitter taste as they're picked off the vine the earliest, before they've hit puberty and turned into yellow and orange pepper teens.

Orange and yellow peppers sit in the middle, just like a traffic light. Sweeter than the green, but not quite as sweet as the aged, ripe red adult pepper.
