Whether sliced in a moussaka, chopped and added into a curry or ratatouille, you can't beat our dear veggie friend the aubergine.
He's great at soaking up flavours in stews and curries, but also grilled and added into salads or roasted like a baked potato as a veggie main or side.
The poor thing has been getting a lot of grief lately on the emoji scene and deserves better for being such a stellar performing, upstanding veg.
