Fresh Thyme
Similar to its herby, robust brethren rosemary, our thyme can also withstand heat so is ideal for adding flavour to slow-cooked dishes, and marries well with its herb pals, parsley and bay.
Add at the beginning of cooking for a subtle background note, but if you find you want more punch after your chef's taster, add a little more just before serving - thyming is everything, eh?
You can chop it up in stuffing or in a marinade for olives, sprinkle on flatbread, add to fish, meat or veggie marinades, even tuck sprigs, with half a lemon and onion, inside a chicken before roasting...
