Our leek is one of the proud national symbols of Wales, along with the sunny daffodil and its red dragon.

But the Scots and the French have also laid claim to this veg too. Both have invented soups with leek as the key ingredient. Just look up cock-a-leekie and vichyssoise. No guessing which one belongs to which with those names, eh? 

Part of the onion family, leek is actually a very versatile veggie, so don't just pigeon-hole it to soups, it makes a great pan-frying side and also adds nice flavour and texture to casseroles, tarts and pies.
